The low Glycaemic Index (GI) of almond flour helps keep energy levels steady during exercise by releasing glucose slowly into the bloodstream. This prevents the energy crashes that can happen with high-carb foods. This allows runners to maintain their energy and stamina throughout their run, without feeling tired or sluggish.

Ingredients:

  • 1 cup butter, softened
  • 2 cups almond flour
  • 2 tbs Natvia
  • 1/4 tsp vanilla extract

Instructions:

  1. Preheat your oven 160 degrees Celsius.
  2. Line a baking tray with baking paper.
  3. In a large bowl, add softened butter and Nativa. Mix until smooth.
  4. Add the almond flour and salt to the butter mixture, mixing well. Add the vanilla extract, and mix again.
  5. Take spoonfuls of dough and roll them into balls, then flatten them gently with the palm of your hand.
  6. Press the rim of a cup gently into the dough to shape it into a round cookie shape.
  7. Use a fork to gently press down on the cookies, creating lines across the top
    Place the cookies on the prepared baking sheet and bake for 15 minutes, until golden brown.
  8. Allow the cookies to cool.
